feat(store): add observability instrumentation

Summary

• add OpenTelemetry instrumentation for SQLDB, Redis, MongoDB, S3, and GORM store wrappers
• register SQL/GORM DB stats metrics and Redis metrics
• add structured initialization/error logging without leaking credentials or DSNs
